Baigan ka bharta basically means mashed up eggplants.It made in two different ways.One is a Punjabi dish in which we cook roasted Baigan/Eggplant with minimal spices.And in another version of Baigan bharta we use raw ingredients in roasted Baigan/Eggplant. Especially raw mustard oil and raw garlic gives twist to its flavor. This baigan ka bharta gos very well with pyaz ki roti, baati.Or you can have it as a side dish.

Ingredients

  • Eggplant (round) - 2 medium size
  • Tomato - 3 large
  • Garlic - 5-6 cloves finely chopped
  • Ginger - 1"(chopped)
  • Green chillies -2 finely chopped
  • Onion - 1 small (chopped)
  • Fresh corriender - 1 tbsp
  • tbsp Musturd oil - 1 tbsp
  • Potato - 1 medium (boiled and roughly mashed)

Method

Step 1

First of all roast the eggplants.

Step 2

You can roast it on gas cook top just grease the eggplant slit two or three side of eggplant and place it on low flame and in between keep changing the sides.

Step 3

Cook until the eggplant is scorched and the inner flesh is very soft.

Step 4

You can even grill it in your oven grill or barbeque grill . When the egg plant is cooked keep it aside and let it cool

Step 5

Peel the skin and remove the stem.

Step 6

Blanch the tomatoes for 5-6 minutes on medium flame or You can microwave tomatoes(With little water) on high for 5 minutes.Peel it and finely chop it.

Step 7

In a bowl put cooked and peeled eggplant and mash it roughly.

Step 8

Now add blanched and chopped tomato, boiled potatoes chopped ginger and garlic,onion,green chilies and fresh coriander salt and mustard oil.

Step 9

Mix properly and serve.
