Makhane ki kheer  or phool makhane ki kheer is one of the most famous recipe for any fasting or vrat. It is very easy, quick and healthy recipe. It can be served as dessert also. It can be served hot, warm or cold like any other kheer.

Phool makhana is also known as Fox nut or Puffed lotus seed.

Ingredients

  • Makhane/ foxnut - 1cup
  • Milk - 750 ml
  • Almonds - 7-8 blanched and chopped
  • Green Cardamom Powder - 1/4 tsp
  • Sugar - 2 tbsp / or as per taste
  • Saffron - optional
  • Pure Ghee - 1 tsp
  • Saffron- 3-4 strings

Method

Step 1

In a pan warm ghee and add all makhana / foxnut , on medium flame fry. Till it turns crispy. Let it cool.

Step 2

In a thick bottomed pan( WONDERCHEF Casserole ) boil the milk. keep it on low flame and keep on stirring at intervals until it thickens slightly.

Step 3

Meanwhile break some makhana into coarse powder with your finger or thumb. This will thicken the kheer.

Step 4

When the milk is slightly thicken add saffron then roasted makhana. let it simmer for 4-5 minutes.

Step 5

Then add sugar and boil for another 2-3 minutes.

Step 6

Now add cardamom powder and almonds and turn off the flame.

Step 7

Stir well and serve.
