Tamatar ki meethi chutney is a very tasty dish. Tamatar ki meethi chutney is a winter delicacy as the tomato available in winter are juciest. This chutney is thick jam like preparation. Tamatar ki meethi chutney is served with parathas or poories in winter.This chutney has amazing flavour .
NOTE : Paanch Phoren is a mixture of following ingredients in equal proportion:
- Nigella Seed (kalonji)
- Yellow/black musturd (Raai/Sarson)
- Fenugreek seed (methi)
- Cumin seed (jeera)
- Fennel seed (saunf)
- Tomato - 500 gms
- Onion - 1 medium (chopped)
- Dry whole Red chilly - 2-3
- Ginger - 1 tsp chopped
- Sugar - 6 tbsp
- Salt - 1/4 tsp
- Red chilly powder - 1/4 tsp
- Vegetable oil - 1 tbsp
- Paanch Phoren - 1/2 tsp
Wash and cut the tomato in small pieces. And break the red chilly in 2-3 pieces.
Heat a oil in a pan add paanch phoren and broken red chilly , wait till they get aromatic and turn brownish.
Then add chopped ginger and onion and fry for 1 minute on medium flame.
Then add chopped tomato & salt. Stir and cook covered on low flame for 8-10 minutes. Keep on stirring in between.
Tomato should be mushy.Then add sugar and red chilly powder and cook for another 7-8 minutes. If needed you can add little water.
When fully cooked there will be no excess water and the colour will be darken a bit. Remove from flame.
Cool and serve Tamatar ki meethi chutney.
