Paniyaram is a Chettinad recipe. Paniyaram can be made spicy,plain or sweet. Here is the recipe of Vegetable Paniyaram,this is a very healthy option for the little ones as it has load of vegetables. And paniyaram is soft from inside and has a crispy outer surface.
NOTE: Avoid green chilly if you are making it for kids.
- Idli Batter - 1 cup
- Onion - 1 tbsp (chopped)
- Carrot - 1tbsp (chopped)
- Cabbage - 1 tbsp (chopped)
- Green Chilly - chopped as per taste
- Black Mustard - 1/2 tsp
- Urad Dal - 1/2 tsp
- Curry leave - 4-5
- Coconut Grated - 1/2 tbsp
- Fresh Coriander leave - 1 tbsp
- Salt as per taste
In a pan heat 1tsp of oil,then add black mustard,urad dal and curry leave and let it splutter.
Then add green chilly ,chopped onion,carrot ,cabbage and sauté for 30 seconds on high flame.
Add this vegetable mixture into the idli batter.
After that add grated coconut ,salt and coriander leave in the idli batter and give nice stir.
Heat Paniyaram pan and drop few drops of oil into it.
Then pour spoonful of batter into each holes of the pan and and cook on low flame for 2-3 minutes.
Now with the help of spoon turn each of the paniyaram and allow the other side to get cooked.
Turn once or twice for uniform cooking.
Vegetable Paniyaram is ready to serve. Serve it with coconut chutney.
